These are macadamia nut and coconut cookies I made for my friend Drew.

I searched everywhere online and couldn’t find a recipe for the combination, so I decided to make one up.

Here it is:

  • 1 cup butter, softened
  • 1 1/2 cup of sugar
  • 1 egg yolk
  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • A pinch of salt
  • 1/2 cup dried, unsweetened coconut
  • 1 cup macadamia nut

1. Preheat the oven to 375. Line 2 cookie sheets with tin foil, and grease the tin foil with butter.

2. Mix the butter and sugar together in a large bowl with a spoon.

3. Beat in egg yolk and vanilla extract.

4. Add flower and salt to the mixture.

5. Add in the coconut and macadamia nuts, and mix all ingredients together throughly.

6. Bake for about 15 minutes or until the tops are golden brown.

7. Enjoy!


UPDATE: The USPS botched the delivery of these gems in a major way. According to Drew, when they got to Texas, the box was opened, the Tupperware inside the box was open, and the whole opened mess was wet.
